At the end of a long and much loved Homeschool Co-op day last week I feel asleep and we didn’t eat dinner until after 9 pm. So I have decided that the last thing I need to do is “prepare” a meal for my family after co-op. I think many of you probably feel the same way. However, as dedicated Christian homemakers we can’t let the little dears go hungry. And we definitely do not want to get into the habit of eating out because it is both expensive and detrimental to your health . As in Mom and Dad, I mean it’s bad for the kids too but they probably don’t have to have their cholesterol. blood sugar and only the Lord knows what else checked every year, ya know!
So here are some recipes we throw in the crock pot the night before co-op mornings so we can have a nice nutritious meal after co-op without me keeling over! <<sigh>> Because ,girl I need a nap after co-op not a spatula!
Suggestions to Simplify the Post Co-op Dinner
- Put it together the night before when you are making that nights dinner. You were going to have to clean up anyways.
- Use your prebrowned and pre cut up veggies you are storing in the fridge because you read the Simple Guide to Saving Money on Food and you have now incorporated that into your routines.
- Use a crock pot liner, it does cost a little bit extra but when you are exhausted that .50 may be worth it.
- Each time you make a crockpot meal, make 1 or 2 extras and freeze them until you have a good supply and some variety.
