Homemade Bean & Cheese Burritos

So now you’re cooking a really good pot of beans one to four times per month.  Be sure to double the amount your family will eat. Our first tasty bean recipe is bean burritos

Bean & Cheese Burritos

serves up to 16

  • 4 cups cooked pinto beans
  • 2 cups of rice
  • 2 cup salsa
  • 1/2 cup diced cooked onions
  • 3 cups shredded cheddar cheese
  • 1 cup shredded cheddar cheese (for top of burritos)
  • 16 large tortillas
  • 1 1/2T  taco seasoning

Optional toppings ( I generally do not buy these toppings just for this meal but we usually have these items in the fridge on a regular basis.)

  • Tomatoes (we have lots of garden tomatoes = free!)
  • sour cream
  • olives

Directions:

  1.  Mix all of this together in a large bowl
  2. Scoop out a  1/3 cup of ingredients into each burrito
  3. Fold and place in 8×13 seam down
  4. Top with cheese
  5. Place in 400* oven until the cheese on top melts

Cost of Burritos $7 or .44 per burrito!

I normally serve this with homemade Spanish Rice and corn.

Ways to reduce the cost of this meal

  1. Make your own tortillas
  2. Be sure to stock up on cheese on sale (we can get it for $1.25 for 2 cups)
  3. Homemade Taco Seasoning or Sam’s Club Spices
  4. Extra Large Salsa’s
